A noúrishing noodle soúp inspired by Kúng Fú Panda.
INGREDIENTS
- 8 cúps chicken/vegetable stock
- 1 cúp cabbage shredded
- 1 cúp carrots grated
- 2 chicken breasts cooked and shredded (súbstitúte with tofú if vegetarian)
- 1 cúp múshrooms roúghly chopped (bútton or Shiitake)
- 2 tbsp soy saúce
- 2 tbsp fish saúce
- 1/2 tsp groúnd ginger
- 12 oúnces Údon noodles
- 4 green onions chopped
INSTRÚCTIONS
- Boil the broth with a little salt to taste.
- Stir in the cabbage, múshrooms, carrots, onions and chicken or tofú.
- Allow the mixtúre to boil for two minútes and then lower it to a simmer.
- Stir in the noodles and cook for 5-8 minútes úntil tender.
