Kúng Fú Kickin' Soúp



A noúrishing noodle soúp inspired by Kúng Fú Panda.
INGREDIENTS
  • 8 cúps chicken/vegetable stock
  • 1 cúp cabbage shredded
  • 1 cúp carrots grated
  • 2 chicken breasts cooked and shredded (súbstitúte with tofú if vegetarian)
  • 1 cúp múshrooms roúghly chopped (bútton or Shiitake)
  • 2 tbsp soy saúce
  • 2 tbsp fish saúce
  • 1/2 tsp groúnd ginger
  • 12 oúnces Údon noodles
  • 4 green onions chopped

INSTRÚCTIONS
  1. Boil the broth with a little salt to taste.
  2. Stir in the cabbage, múshrooms, carrots, onions and chicken or tofú.
  3. Allow the mixtúre to boil for two minútes and then lower it to a simmer.
  4. Stir in the noodles and cook for 5-8 minútes úntil tender.
