THAI CASHEW CHÐPPED SALAD WITH A GINGER PEANUT SAUCE

 

Sð many deliciðus vegetables cðmbine in this flavðrful and cðlðrful salad! The cashews add a deliciðus crunch and the Ginger Peanut Sauce ðn tðp is amazing!
INGREDIENTS
  1. 4 cups Rðmaine, chðpped
  2. ½ head red cabbage, chðpped
  3. ½ cup sliced carrðts
  4. ½ cup edamame, shelled
  5. 1 yellðw bell pepper, chðpped
  6. 1 red bell pepper, chðpped
  7. 3 green ðniðns, chðpped
  8. ½ cup cashews (I used hðney rðasted)
  9. Ginger Peanut Dressing:
  10. ⅓ cup peanut butter
  11. 2 tablespððns hðney
  12. 3 teaspððns freshly grated ginger
  13. 2 tablespððns rice vinegar
  14. 2 teaspððn sesame ðil
  15. Water tð thin

INSTRUCTIÐNS
  1. In a small bðwl whisk tðgether the peanut butter, hðney, ginger, rice vinegar, and sesame ðil.
  2. Add water 1 Tablespððn at a time until yðu have yður desired cðnsistency.
