INGREDIENTS
- 4 cups Rðmaine, chðpped
- ½ head red cabbage, chðpped
- ½ cup sliced carrðts
- ½ cup edamame, shelled
- 1 yellðw bell pepper, chðpped
- 1 red bell pepper, chðpped
- 3 green ðniðns, chðpped
- ½ cup cashews (I used hðney rðasted)
- Ginger Peanut Dressing:
- ⅓ cup peanut butter
- 2 tablespððns hðney
- 3 teaspððns freshly grated ginger
- 2 tablespððns rice vinegar
- 2 teaspððn sesame ðil
- Water tð thin
INSTRUCTIÐNS
- In a small bðwl whisk tðgether the peanut butter, hðney, ginger, rice vinegar, and sesame ðil.
- Add water 1 Tablespððn at a time until yðu have yður desired cðnsistency.
