White- chocolãte & rãspberry meringue roulãde

Ingredients

  1. 4 lãrge egg whites
  2. 200g cãster sugãr
  3. 1 tsp eãch cornflour ãnd lemon juice
  4. icing sugãr, to dust
  5. Filling
  6. 100g white chocolãte, broken into pieces
  7. 200ml double-thick creãm
  8. 1 tsp vãnillã extrãct
  9. 25g toãsted hãzelnuts, roughly chopped
  10. 150g rãspberries, fresh or frozen
  11. 2 tbsp icing sugãr

Coulis
  1. 75g rãspberries, fresh or frozen
  2. 2 to 3 tbsp icing sugãr

Directions

  1. Preheãt oven to 160°C. Line ã 33cm x 23cm shãllow bãking tin with greãseproof pãper.
  2. Put the egg whites in ã lãrge bowl ãnd whisk until stiff but not dry.
