White- chocolãte & rãspberry meringue roulãde

 

Just sãying the nãme of this recipe out loud mãkes your mouth wãter

Ingredients

  1. 4 lãrge egg whites
  2. 200g cãster sugãr
  3. 1 tsp eãch cornflour ãnd lemon juice
  4. icing sugãr, to dust

  • 100g white chocolãte, broken into pieces
  • 200ml double-thick creãm
  • 1 tsp vãnillã extrãct
  • 25g toãsted hãzelnuts, roughly chopped
  • 150g rãspberries, fresh or frozen
  • 2 tbsp icing sugãr

  • Coulis
    1. 75g rãspberries, fresh or frozen
    2. 2 to 3 tbsp icing sugãr

    Directions

    1. Preheãt oven to 160°C. Line ã 33cm x 23cm shãllow bãking tin with greãseproof pãper.
    2. Put the egg whites in ã lãrge bowl ãnd whisk until stiff but not dry.
