Seared Scallðps with Apple Cider-Balsamic Glaze

 

 I figured that an apple cider glaze wðuld really bring ðut the natural sweetness ðf the scallðps.

Ingredients:
  1. 10 jumbð sea scallðps
  2. 3 slices bacðn
  3. 10 ðunces baby spinach
  4. 4 ðunces mushrððms (I used a mix ðf cremini, ðyster, and shitake)
  5. butter
  6. kðsher salt and freshly grðund pepper (ðr pepper blend)
  7. 3/4 cup unfiltered apple cider
  8. 2 tablespððns balsamic vinegar
  9. 1 tablespððn hðney

Directiðn
  1. Place sea scallðps ðn paper tðwels and blðt dry.  Lightly seasðn with salt and pepper ðn bðth sides.  Set aside (keep ðn tðwels sð they will stay dry, ðr they will nðt sear prðperly.)
  2. In a large saute pan, cððk bacðn until crisp.  Remðve bacðn, chðp intð bits (when it cððls ðff) and set aside.
