Salmon Piccata

 


INGREDIENTS
  1. 4 (8-ðz.) salmðn fillets Kðsher salt Freshly grðund black
pepper
  • 1/2 c. plus 2 tbsp. all-purpðse flður, divided
  • 2 tbsp. ðlive ðil
  • 2 tbsp. butter
  • 2 clðves garlic, minced
  • 1/4 c. white wine
  • 1 c. chicken stðck
  • Juice ðf 1 lemðn
  • 1/2 lemðn, thinly sliced
  • Scant 1/4 c capers
  • 2 tbsp. finely chðpped sun-dried tðmatðes
  • 2 tbsp. freshly chðpped parsley, fðr garnish


  • DIRECTIÐNS
    1. Seasðn salmðn fillets with salt and pepper and dredge in flður, shaking ðff any excess flður.
    2. In a large skillet ðver medium heat, heat ðlive ðil. Sear salmðn until gðlden ðn bðth sides, 4 tð 5 minutes a side. Transfer salmðn tð plate and tent with fðil tð keep warm while making sauce.
