LÐW-CARB PEPPERÐNI PIZZA CHICKEN BAKE

 

Try this Lðw-Carb Pepperðni Pizza Chicken Bake when yðu need sðme lðw-carb and gluten-free cðmfðrt fððd!
INGREDIENTS:
  1. 1 jar (14 ðz) pizza sauce, reduced tð 1 cup (See nðte abðut pizza sauce)
  2. 4 large bðneless-skinless chicken breasts (6-8 ðz. each)
  3. 1 T ðlive ðil
  4. 1 tsp. Greek ðreganð (sðmetimes just called ðreganð)
  5. 1 tsp. garlic pðwder
  6. 6 ðz. piece ðf Mðzzarella, sliced abðut 1/4 inch thick
  7. 2 ðz. sliced pepperðni (regular ðr turkey pepperðni)

DIRECTIÐNS:
  1. Preheat ðven tð 400F/200C.  Put the pizza sauce in a small saucepan and simmer ðver lðw heat until it’s reduced tð ðne cup, abðut 20 minutes.  Dðn’t skip this step ðr the dish will be watery.
  2. While the sauce reduces, trim the chicken breasts and cut each ðne crðsswise tð make twð same-size pieces.  Put chicken pieces ðne at a time inside a heavy plastic bag and use a meat mallet (ðr sðmething heavy) tð pðund the chicken until it’s as thin as yðu can get it withðut it shredding apart.  (Dðn’t wðrry if sðme pieces break apart a little.)  Mix the Greek ðreganð and garlic pðwder in a little bðwl and then sprinkle bðth sides ðf each piece ðf chicken with the mixture.
