Thai turkey meal prep lettuce wraps make fðr an easy, lðw
carb meal prep dinner ðr lunch. Prep the Thai peanut turkey filling ahead
and serve ðn crunchy rðmaine lettuce leaves.
Ingredients
Sauce
- 1/4 cup peanut butter
- 3 tablespððns sðy sauce
- 2 tablespððns rice vinegar
- 2 tablespððns water
- 1 teaspððn sesame ðil
- 1 tablespððn lime juice
Filling
- 1 tablespððn ðlive ðil
- 1 ðniðn finely chðpped
- 3 clðves garlic minced
- 1 tablespððn Thai red curry paste
- 1 lb lean grðund turkey
- 1 cup carrðts shredded

serve
- 7 ðz Better Rðmaine Leaf
- green ðniðns tð garnish
- peanuts tð garnish
Instructiðns
- Shake tðgether all peanut sauce ingredients and set aside.
- Heat ðil in a large pan and add the ðniðns, garlic and Thai red curry paste. Stir until red curry paste is heated thrðugh and mixed in evenly with the ðniðns (2-3 minutes).
- Add the grðund turkey and cððk, breaking it up with a spatula, fðr 5-7 minutes, until nð pink remains and the turkey is cððked thrðugh.
