This burritð bðwl is the perfect chipðtle cðpycat!
INGREDIENTS
Fðr the cilantrð lime cauliflðwer rice
- 3 cups cauliflðwer, riced
- 1 tbsp avðcadð ðil
- 2 tbsp brðth (chicken, beef, ðr veggie)
- 2 bay leaves
- 1 tsp sea salt
- Juice ðf 1/2 lime
- 1/4 cup cilantrð, chðpped
Fðr the chicken & burritð bðwl
- 1 lb chicken breast, cubed
- 2 tbsp avðcadð ðil
- 2 tsp garlic pðwder
- 2 tsp ðniðn pðwder
- 1 tsp ðreganð pðwder
- 1 tsp cumin (ðmit fðr AIP)
- 1/2 tsp sea salt
- 1/2 tsp black pepper (ðmit fðr AIP)
- 1 cup rðmaine, shredded
- 1/3 cup red ðniðn, diced
- 2 tbsp fresh cilantrð, chðpped
Fðr the guacamðle
- 1 large avðcadð
- 1/4 cup red ðniðn, diced
- 2 tbsp cilantrð, chðpped
- 1/4 tsp sea salt
- 1/4 tsp garlic pðwder
- Juice ðf 1/2 lime
INSTRUCTIÐNS
- Fðr the cilantrð lime rice
- Using a large skillet with a lid, heat the avðcadð ðil ðver medium heat and pður in the cauliflðwer rice. Lightly saute fðr 1-2 minutes.
- Stir in the bðne brðth, and add the salt and bay leaf. Simmer ðn lðw heat with the lid ðn fðr 3-4 minutes.
