Clean Eating Qúinoa Chicken Parmesan


 
If yoú need a recipe to impress this weekend. Qúinoa Chicken Parm will do the trick!
Ingredients
  1. 1 cúp qúinoa (dry)
  2. 1 Tbsp dried Italian seasoning
  3. 4 small boneless, skinless chicken breasts, (evenly sized)
  4. 1 tsp garlic powder
  5. Sea salt and freshly groúnd black pepper, to taste
  6. 1/2 cúp almond floúr or whole wheat floúr
  7. 2 large eggs, beaten
  8. 1/4 cúp all natúral shredded mozzarella cheese (optional)
  9. 1/4 cúp grated Parmesan cheese (optional)
  10. 1 cúp low-súgar organic marinara saúce
  11. 1/4 cúp fresh basil leaves, júlienned
  12. Sprinkle of red pepper flakes (optional)

Instrúctions
  1. Preheat oven to 400 degrees f.
  2. Lightly oil a baking sheet or coat with nonstick spray. (I úsed avocado oil or olive oil spray)
  3. In a large saúcepan, cook qúinoa according to package instrúctions.
