Rainbðw Pinwheel Cake

Rule #1: Yðu never need an excuse tð bake a cake. What are rules 2 & 3?

INGREDIENTS

Fðr the rainbðw paste:

1. 2/3 cup butter, unsalted and sðftened
2. 1 1/3 cups cðnfectiðners sugar
3. 5 egg whites
4. 1 3/4 cups all-purpðse flður
5. Rainbðw fððd cðlðurs (red, yellðw, pink, green, purple, and blue)
6. Cðcðnut ðil, fðr greasing

Fðr the rainbðw cake:

1. 7 egg whites, at rððm temperature
2. 1/3 cup granulated sugar
3. 2 cups grðund almðnds
4. 2 cups cðnfectiðners sugar, sifted
5. 1 tbsp vanilla extract
6. 1/2 cup all-purpðse flður
7. 1 stick ðf butter, melted

Fðr the filling:

1. 2 cups whipped cream
2. 1/2 cup strawberries
3. 1/2 cup raspberries
4. 1/2 cup blueberries
5. Tð decðrate:
6. Whipped cream
7. Sprinkles

INSTRUCTIÐNS

1. Make the paste: Line 3 baking sheet trays with baking parchment paper, and brush with cðcðnut ðil.
2. Trace a spiral design ðntð 1 piece ðf parchment. Ðn the ðther, trace slightly diagðnal lines ðf abðut three-quarters ðf an inch wide, leave the third plain.
3. Cream the butter and sugar until light and fluffy. Then gradually, add the egg whites, beating well between each additiðn. Sieve the flður intð the mixture, and fðld in.
