Chicken Búrrito Bowls

INGREDIENTS
  1. 2–3 boneless skinless chicken breasts
  2. 3 bell peppers, any color, sliced
  3. 1 large red onion, sliced
  4. 2 tablespoons olive oil
  5. 1 tablespoon taco seasoning
  6. Salt and pepper
  7. 1 jar salsa
  8. 3 cúps cooked brown rice, divided
  9. 1 can black beans, drained and rinsed
  10. 1 can corn
  11. 1 cúp shredded cheddar cheese
  12. 1 lime, sliced into wedges
  13. Fresh cilantro to garnish

PREPARATION
  1. Preheat oven to 400˚F/200˚C.
  2. Line a baking sheet with foil.
