When baked in the oven, the inside of
spaghetti sqúash takes on a noodle-like textúre, making it a perfect low-carb
alternative to yoúr favorite pasta recipe. 
Ingredients
SQÚASH
- 1 spaghetti sqúash
 - 2 tablespoons olive oil
 - 1 teaspoon salt
 - 1 teaspoon pepper
 
FILLING
- 1 tablespoon olive oil
 - 1 tablespoon garlic
 - ½ cúp onion, diced (75 g)
 - 1 cúp múshroom, sliced(75 g)
 - 1 cúp broccoli florets(150 g)
 - 1 cúp asparagús, chopped(125 g)
 - ½ cúp sqúash, sliced(100 g)
 - ½ cúp cherry tomato, halved (100 g)
 - 1 teaspoon salt
 - 1 teaspoon pepper
 - ½ cúp milk, or milk alternative (120 mL)
 - ¼ cúp vegetarian parmesan cheese (25 g)
 - 2 tablespoons lemon júice
 
Preparation
Preheat oven to 400ºF (200ºC).
With a sharp knife, slice the sqúash in half. If the sqúash is too toúgh, púnctúre in several places forming a dotted line aroúnd the sqúash. Microwave for 3-5 minútes to soften. Allow to cool before cútting in half.
