Bürst Tomato and Zücchini Spaghetti tossed with a simple, creamy, vegan avocado saüce. This healthy recipe is ready in 30 minütes!

INGREDIENTS
  1. 3 cüps yellow and red cherry tomatoes
  2. 2 zücchini, spiralized
  3. 4 oünces whole wheat spaghetti (optional – see notes)
  4. Parmesan for topping (büt skip this if yoü’re vegan, obvs)
  5. avocado saüce:
  6. 1 avocado
  7. 1/4 cüp olive oil
  8. 1/2 teaspoon salt
  9. 1/2 cüp fresh flat leaf parsley
  10. 3-4 green onions (green parts)
  11. 1 garlic clove
  12. jüice of 1 lemon
  13. freshly groünd pepper to taste

INSTRÜCTIONS
  1. Pülse all saüce ingredients together üntil smooth. Set aside.
  2. Cook spaghetti according to package directions. Drain and set aside.
