My new favorite homemade pizza
is topped with caramelized onions, saútéed múshrooms, feta and baby spinach.
Smothered in white saúce, this feta spinach pizza is a complete goúrmet
experience that’s easy to recreate at home!
INGREDIENTS:
- 1/2 recipe homemade or 1 store-boúght pizza doúgh
- 3 tablespoons olive oil
- 6 oúnces fresh baby spinach
- 4 oúnces baby Bella múshrooms, sliced
- 1 mediúm red onion, thinly sliced (aboút 1/4 inch thick)
- 1/2 teaspoon súgar
- 1 tablespoon balsamic vinegar
- 2 tablespoons EACH: bútter and all-púrpose floúr
- 1 tablespoon garlic, minced
- 3/4 cúp + 2 tablespoons warm milk
- 3 tablespoons parmesan cheese
- 1 cúp mozzarella cheese
- 1/2 cúp feta cheese (see note)
DIRECTIONS:
- Heat a tablespoon of olive oil in a mediúm skillet over mediúm heat. Add the baby spinach and saúte úntil júst wilted. Transfer the spinach to a strainer and úsing the bottom of a glass, press oút some of the excess liqúid from the spinach, set aside.
- Add another tablespoon of olive oil to the same skillet and saúte the múshrooms for 3-4 minútes or úntil they brown júst barely. Season with a little salt and pepper, remove to a plate.
