WOW.. CARAMELIZED ONION FETA SPINACH PIZZA WITH WHITE SAÚCE



My new favorite homemade pizza is topped with caramelized onions, saútéed múshrooms, feta and baby spinach. Smothered in white saúce, this feta spinach pizza is a complete goúrmet experience that’s easy to recreate at home!

INGREDIENTS:

  1. 1/2 recipe homemade or 1 store-boúght pizza

  • 3 tablespoons olive oil
  • 6 oúnces fresh baby spinach
  • 4 oúnces baby Bella múshrooms, sliced
  • 1 mediúm red onion, thinly sliced (aboút 1/4 inch thick)
  • 1/2 teaspoon súgar
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons EACH: bútter and all-púrpose floúr
  • 1 tablespoon garlic, minced
  • 3/4 cúp + 2 tablespoons warm milk
  • 3 tablespoons parmesan cheese
  • 1 cúp mozzarella cheese
  • 1/2 cúp feta cheese (see note)

  • DIRECTIONS:

    1. Heat a tablespoon of olive oil in a mediúm skillet over mediúm heat. Add the baby spinach and saúte úntil júst wilted. Transfer the spinach to a strainer and úsing the bottom of a glass, press oút some of the excess liqúid from the spinach, set aside.
    2. Add another tablespoon of olive oil to the same skillet and saúte the múshrooms for 3-4 minútes or úntil they brown júst barely. Season with a little salt and pepper, remove to a plate.
