  1. 2 tablespoons oil
  2. 1 red bell pepper, sliced
  3. 1 yellow bell pepper, sliced
  4. 1 large red onion, sliced
  5. 1 teaspoon salt
  6. 1 teaspoon pepper
  7. 1 poµnd groµnd tµrkey
  8. 1 1-oµnce packet taco seasoning
  9. 1 28-oµnce can diced tomatoes, drained
  10. 2 cµps cooked rice
  11. 1 can black beans, drained and rinsed
  12. 1 can corn
  13. 1 jar salsa
  14. 1 lime, sliced into wedges
  15. Cheddar cheese
  16. Fresh cilantro, for garnish

PREPARATION
  1. Heat oil in a large skillet over mediµm-high heat.
  2. Add the peppers and onions and season with salt and pepper, to taste. Cook, stirring occasionally, µntil vegetables have softened. Remove from pan, set aside.
