Healthy Sweet Potato Panko Tots



Awesome! Used almond flour instead of breadcrumbs for low carb option. Also can use a scoop and flatten if forming tots is too tedious 😃


Ingredients

  1. 1 large sweet potato, peeled and grated
  2. ⅓ cúp
  3. panko breadcrúmbs (30 g)
  4. ⅓ cúp
  5. parsley, minced(10 g)
  6. 1 tablespoon 
  7. fresh rosemary, minced
  8. 2 cloves garlic, minced
  9. ¼ teaspoon
  10. onion powder
  11. ½ teaspoon
  12. salt, divided
  13. ¼ teaspoon
  14. black pepper 
  15. 1 egg









Preparation

  1. Preheat oven to 400°F (200°C).
  2. Grate the sweet potato with a coarse cheese grater.
